Perfecting the art of coffee is a delicate process, with many factors that intertwine up until that first sip. Often, we find ourselves gulping coffee only for energy, but it is here at Castle Hot Springs we invite you to slow down and savor it in an unexpected way. 

At Castle Hot Springs, culinary experiences are treated with curation and care. By sourcing through local purveyors, Chef and our team venture to unique sources to welcome the finest experiences for guests to indulge. Experience the coffee program at Harvest, where hot coffee and cold coffee are brewed with natural mineral spring waters rich in lithium, magnesium, calcium, bicarbonates and many other enhancing elements. 

 

Uniquely Sourced 

Our story begins at The Roastery of Cave Creek, known locally as ROC². Situated in the historic western town of Cave Creek, Arizona. Just 30 miles from the resort, ROC² is dedicated to delivering the finest fresh, locally roasted coffee in the state. Sourcing sustainable, single-origin beans in small batches from around the globe, they blend art and science to methodically roast each batch. By identifying the exact sweet spot, they unlock the complex and nuanced flavor profiles of every bean.

Research and Development

Executive Chef, Chris Knouse and Restaurant Manager, Istvan Kosa visited ROC² to experience their intentional roasting process firsthand. Sourcing locally allows us to serve some of Arizona’s finest coffee, roasted fresh just before arriving at the resort. Just as every dish at Harvest is made to order, we apply the exact same philosophy to our beverage program.

 

“We searched for a well-balanced, bold-flavored coffee that would perform exceptionally well with our water profile. Through the roasting process, we found that a higher development ratio than ROC²’s standard roast created exactly the flavor profile we were looking for. This unique roast delivers outstanding results in both drip coffee and cold brew applications. In the cold brew, a smooth, mellow nuttiness comes through that guests particularly enjoy.

Our next exciting challenge was crafting a flavor profile that harmonizes with our mineral-rich hot springs water. Through diligent tasting sessions, the roasters and Chef created the Castle Blend; a deep, satisfying organic blend with a timeless, untamed character. Rich, earthy, and bold, it finishes smoothly, leaving you longing for the next cup.

Hot Coffee 

Freshly brewed coffee is served daily at Harvest, the resort’s signature restaurant. As the mineral hot springs water filters through the Castle Blend, elements like lithium, magnesium, calcium, and bicarbonates naturally heighten the coffee’s character, offering an enriched tasting experience found nowhere else.

 

Cold Brew Coffee

As the weather warms, guests are invited to enjoy the Castle Blend as a cold brew. Steeped for over 24 hours at Harvest, this process produces a remarkably smooth, naturally sweet, and mineral-rich coffee served over ice. Whether welcoming the morning or enjoying an afternoon refreshment, our cold brew offers an organic tasting experience that leaves you vibrant and revitalized.

Post-Roast Sustainability 

By partnering directly with global farmers and prioritizing sustainability, ROC² delivers high-quality beans with a purpose. Their small-batch, roast-to-order philosophy ensures every bag arrives at peak freshness with virtually zero overstock. This commitment to eliminating waste sits at the heart of their sustainable practices.

After brewing, the spent coffee grounds are integrated into the resort’s organic composting system. Rich in nitrogen, the grounds energize beneficial microbes and accelerate the decomposition of organic matter, transforming into a nutrient-dense soil conditioner. This compost nourishes the soil across our on-site farms and gardens, nourishing plants within our closed-loop agricultural ecosystem.

As the compost is turned and spread across the farm by Castle Hot Springs growers, every cup of coffee enjoyed by our guests returns to the earth, giving life to new growth.
