Shiitake Mushrooms (or any kind)
1 C Sherry Vinegar
1 C Soy Sauce
2 C H2O
¾ C Brown Sugar
Bring ingredients to a boil over medium-high heat, once boiling pour over mushrooms, cover with cheese cloth, and cool in fridge overnight.
