We’re taking the term ‘local craft cocktail’ to a whole new level. When we say local, we mean ingredients that you can watch grow as you sip a custom concoction. Our on-site farm adds the flavors and a short jaunt away from Bar 1896, is our newly planted, 3-acres Agave field which will supply the spirit. Perched up on a Mesa with soaring views of Salvation Peak this area will serve as the initial nursery for our Agave Spirit program and a show stopping spot for guests to tour and taste something uniquely Arizona.
It is well known that Agaves like the Arizona desert air and are a common sight in local landscaping, though never before have they been planted in Arizona for the specific reason of making spirits. Another first for our Arizona farmers, is the technique that is used to coax these plants to produce. Minimal water use will allow the Agaves to grow naturally in the habitat and for our team to determine which Agave species perform the best for future planting. This results in a sustainable farming practice and deliciously fresh cocktails (starting in about 3 years – so keep tabs on us).
Agaves are beautiful to look at, which is the appeal for their use throughout the Valley of the Sun. The Agave Mesa at Castle Hot Springs boasts precisely placed plants in a unique and appealing design which will provide a magical environment for tequila tasting or a dinner under the stars.
