A small bite that packs big flavor, these honey-roasted carrot bites are sure to be a hit at your next gathering (or as just a little appetizer for yourself!) Follow along below:
HONEY ROASTED CARROTS
• 3 cups of Carrots• 1/4 cup White Wine Vinegar• 1 cup Sliced Almonds• 3 tbl Butter• 4 oz Honey• 1 cup Basil• 1/2 cup Olive Oil• Salt and Pepper To Taste
WHIPPED RICOTTA
• 2 cups Ricotta• 1 tbl extra virgin olive oil• Salt and Pepper to taste
INSTRUCTIONS
1 | Toss carrots with olive oil salt and pepper and roast in the oven at 425f until golden brown and tender. As soon as they come out of the oven, toss them with Vinegar2 | Turn the oven down to 300f and toast almonds3 | When carrots are cool enough to work with, cut them on a thick bias. Place on a sheet pan and drizzle with honey and butter. Return to oven and roast until honey caramelizes4 | Whip Ricotta cheese in a food processor or like machine until cheese is smooth, about 3min. Drizzle in olive oil and season with salt and pepper5 | Use your favorite country-style loaf and cut into ¾” thick slices. Spread out on a sheet pan and brush with oil. Grill over an open flame or in a pan on medium-high until the bread gets a nice char6 | To serve, spread ricotta on toast and top with carrots. You can garnish with fresh herbs such as Dill or Chives.
