3 heads baby romaine- cut in half
Toppings
2 cups winter squash- peeled, small diced and roasted
1 apple- small diced
½ cup pomegranate seeds
¼ cup roasted pecans
½ cup blue cheese
Creamy Maple Dressing
1/4 cup mayonnaise
1/4 cup extra virgin olive oil
1/4 cup maple syrup
1 tbsp whole graine mustard
1 tbsp apple cider vinegar
1 tsp sea salt
1/4 tsp fresh black pepper
Process
Place lettuce on plate and place toppings on lettuce
Combine all ingredients for dressing in a small jar and shake until combined. Drizzle with maple dressing over salad and serve.
